Plan and direct food preparation and culinary activities.Plan, create and modify menus.Ensure that high standards of hygiene, cleanliness and safety are maintained at all times.Ensure that food requirements are economically and technically correct within the budgeted labor cost.Issue the requisition and purchase of products and food supplies. Set staff work schedules according to the operation s needs. Supervise and follow up on the kitchen staff activities.Oversee staff training.Recruit and manage the kitchen staff.Resolve any rising problems or complaints. Add your final touch to prepared platters. Develop standard recipes and techniques for food preparation and presentation.Coordinate with the Food & Beverage Manager about the food production aspects of special events and banquets. Coordinate with the Sales & Marketing department in relation to banquet and related events.
