Purpose:The Japanese Sando Bread Specialist will craft authentic, high-quality Japanese milk bread (shokupan) used in our signature fruit sandos. They will uphold Okawa?s commitment to traditional techniques while optimizing production to meet volume demands.Location: This position is based in Riyadh, Saudi Arabia.Key Responsibilities:?Prepare shokupan dough daily using traditional Japanese tangzhong method?Precisely shape and bake shokupan loaves to meet Okawa?s size and texture standards?Monitor ingredient inventory, dough production, proofing, and baking to ensure consistent quality?Slice and package shokupan for use in Okawa?s fruit sando creations?Maintain immaculate hygiene and organization of the bakery area?Train junior bakers on shokupan techniques?Coordinate with procurement on ingredient sourcing?Recommend process improvements to increase efficiency and reduce waste?Ensure compliance with all food safety regulations and Okawa policies
