Job Description

Conduct daily shift briefings to pastry colleagues in absence of Executive Pastry chefLead by example using Fairmont?s: Mission, Vision & ValuesSupport/Coach/Lead & Motivate Pastry colleaguesEnsure storeroom requisitions are accurate to minimize repeat visitsEnsure all kitchen colleagues are aware of standards & expectationsPromote Health and Safety at all timesEnsure proper hygiene as per Abu Dhabi MunicipalityEnsure all grooming, spot check and temperature control sheets are filled as requiredMaintain cleanliness and proper rotation of product in all chillersMinimize wastage/ spoilageMaintain consistent on the job training sessions for Pastry colleaguesLiaison daily with Outlet Chefs to keep open lines of communication & guest feedbackStrives to maintain & improve all food preparations & presentationsParticipate in monthly EOS committee meetings to address colleague EOS issuesStrives to improve J.D.P results for Food QualityAct as an extension of pastry managers to communicate food consistency & qualityDaily checks of all mis en place to ensure freshness & quality standardsStrive to develop as a leader by attending Fairmont Managerial CoursesAssign and follow ? up tasks as dictated by business volumesPerforms any other reasonable duties as required by the department head.QualificationsHave a strong working knowledge of Pastry products, buffet and a la carteWorking knowledge of sugar work/ chocolate skills, etc. an assetWith 5 years of Pastry experience in a 5 star luxury hotel environmentStrong supervisory and communication skillsFood Hygiene and Safety trainedEnthusiastic and with outgoing personality who is very guest drivenStrong multicultural awareness and ability to work with people from diverse cultures.Great attention to detail and creativity especially for buffet presentations.Working knowledge of HACCP, health and safety and hygiene procedures.Outgoing personality, excellent communication skills, flexible working hours, ability to work in a fast-paced, high-pressured environment.
