Participate in the preparation of all items prepared in the pastry and bakery.? Ensure that all desserts are prepared and presented in an appetizing manner.? Work with locally available fresh products wherever possible.? Participate in planning utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes and sales of menu items.? Plan food consumption and requisitions of foodstuffs and kitchen supplies.? Direct subordinates to ensure productivity and adherence Brand Standards.? Review recipes and plan costs.? Conduct shift briefings to ensure operational requirements are known.? Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.? Provide orientation, training and guidance to new colleagues joining the team.? Ensure colleagues are adequately trained and have the right tools and resources to perform their job tasks effectively.?
