Job Description

? Presents himself clean andproper in his job environment.? Ensures proper handling of equipment, prevents loss and damage to assets andgoods.? Administers all matters related to his field of activity.? Always maintains his work environment clean and proper.? Ensures properstandards of sanitation and hygiene.? Follows the correct production procedures accordingto the recipes issuedby theExecutive Pastry Chef.? Prepares all ingredients for baking; measures and mixed ingredients according torecipe usingcups, spoons, and scale; bakes cakes in the oven.? Prepares all kinds of pies and desserts according to recipesfor all kitchen sub-sections.? Prepares and cookiesingredientsfro pie fillings, puddings, custard, and otherdesserts; pours fillings into pieshells.? Mixes, kneads, andshapes dough to make pies, cakes, cookies, andother pastries.? The Chef de Partie has to ensure that agreed quality, hygiene and other standardsare kept or surpassedat alltimes by himself andhis subordinates.? Encourage proactive, efficient and effective inter-departmental communicationwithin and beyond the Food and Beverage division in order to promote a climateof teamwork and enthusiasm.? Responsible for the ordering and requesting of the ingredients on a daily basis.? Oversee and follow through the food safety standards set by Mandarin OrientalAl Faisaliah Hotel, Safe & Sound and through the Saudi Arabia?s HealthMunicipality rules andregulation.? Ensure that Mandarin Oriental Al Faisaliah Hotel?s grooming and appearancestandards are implemented and maintained at all times to reflect an image ofprofessionalismand care.? Effectivelyalways control cleanliness and maintenance of the kitchens andstewardingarea andsupport daily checks done bytheir supervisors.? Assist Executive Pastry Chef to conduct regular hands-on dish training toensure food knowledge and cookingmethods are always up to date.? Share the specific knowledge and recipes of dishes with all related colleagues.? Assist Executive Pastry Chef the food safetyrelatedadministrationarecompliance withthe standardandbeingfollowedaccordingly.? Follow all procedures, policies and practices with regardto the Jardineauditrelated requirements forthe culinarydepartment.? Assist the ExecutivePastry Chef in other administrative mattersfor the outlet.? Perform anyother reasonable duties as required by the Executive PastryChef.
