Job description:? Presents himself clean and properin his job environment.? Ensures proper handling of equipment, prevents loss and damage to assets and goods.? Follows the correct production procedures according to the recipesissued by theExecutive Pastry Chef.? The Chef de Partie has to ensure that agreed quality, hygiene and other standards are keptorsurpassed atalltimes by himself andhissubordina tes.? Encourage proactive, efficient and effective inter-departmental communication withinand beyond the Food and Beverage division in order to promote a climate of teamworkand enthusiasm.? Responsible forthe ordering and requestingof the ingredients on a daily basis.? Oversee and follow through the food safety standardsset by Mandarin Oriental AlFaisaliah Hotel, Safe & Sound and through the Saudi Arabia?s Health Municipality rulesand regulation.? Ensure that Mandarin Oriental Al Faisaliah Hotel?s groomingand appearance standardsare implemented and maintained at all timesto reflect an image of professionalism andcare.? Effectively always control cleanliness andmaintenance ofthe kitchens and stewardingarea and supportdaily checks doneby their supervisors.? Assist Executive Pastry Chef to conduct regular hands-on dish training to ensure foodknowledge andcookingmethodsare always up to date.? Share the specific knowledge andrecipes of dishes with all related colleagues.? Assist Executive Pastry Chef the food safety related administration are compliancewith the standard andbeingfollowed accordingly.? Follow all procedures, policies and practices with regard to the Jardine audit relatedrequirementsfor the culinary department.? Assist the Executive Pastry Chef in other administrativemattersforthe outlet.? Perform any otherreasonable duties asrequired by the Executive Pastry Chef.? Prepares all ingredients for baking; measures and mixed ingredients according to recipeusing cups,spoons, andscale; bakesBreadsin theoven.? Prepares allkinds of sourdough breads, professional honey camp croissants. Danishpastry,bread sandwiches.....etc accordingto recipes for all kitchen subsections.? Prepares and cookiesingredientsfro pie fillings, puddings, custard, and other desserts;poursfillings into pie shells.? Mixes, kneads, and shapes dough to m ake pies, cakes, cookies, and other pastries.
