Essential Functions:The Sous Chef holds a management position within the kitchen department, reporting to the Chef De Cuisine/ Executive Chef and is responsible for supervising the day-to-day running of the restaurant kitchen in the Hotel. The management of food costs and production control are important to reduce wastage in addition to the culinary training that the Sous Chef provides for all kitchen employees on a daily basis.We are looking for individuals who have a solid knowledge of food and are passionate to develop their management skills within the hotel industry, have creativity and flair and the ability to provide guidance to others, and are able to evidence good business acumen and a strong work ethic. The Sous Chef is responsible for Plan, organize, control and direct the work of employees in the Kitchen Department responsible for food preparation while ensuring superior quality and consistency.Applicants are required to have 3-5 years of operational kitchen experience with a diversity of culinary experience and a proven track record in fine dining & a high-end Asian cuisine restaurant. Supervisory and management experience is required and culinary qualifications are essential.
  • Select, train, evaluate, plan schedules and ensure high employee performance, motivate, coach, and discipline all employees in the Hotel?s Elements Restaurant to ensure that established cultural and core standards are met.
  • Manage the Elements Restaurant Dining operation as well as the Private Bar activities and its respective employees inclusive of managers.
  • Be visible in the operation, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control
  • Attend regular operational meetings to ensure effective coordination and cooperation between departments
  • Process the payroll and gratuity reports as required
  • Work harmoniously and professionally with co-workers and supervisors
  • Describe and ensure quality of all food items, ingredients, and preparation methods.
  • Work closely with the Restaurants and IRD Manager, assigned Sous Chef and pastry to maintain effective menu and amenity options while ensuring excellent product quality at a fair price and attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control.
  • Observe physical condition of facilities and equipment in the restaurant and make recommendations for corrections and improvements as needed. Inspect the restaurant for spot checks on bar set ups as well as random quality checks to build guest loyalty in return.
  • Comply with Four Seasons? Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
  • Work harmoniously and professionally with co-workers and supervisors.
  • Assist with the service of food & beverage to guests, cover for the ordertaker if/when needed and conduct spot checks in-room.
  • Assist with the cleaning of operational areas.
Preferred Qualifications and Skills
  • 3-5 years of experience in related field
  • Excellent command in English, Arabic is an advantage
  • Service Passion for Luxury Hospitality and have an eye to details.
