Being responsible to assist Chief Steward for HACCP StandardsTaking ownership of all Food & Beverage back of house areas and common usage spacesKey Deliverables and ResponsibilitiesPlanning & organizing:

  1. Overall organisation and team management of the Stewarding Department
  2. Create and maintain all budgets
Operations:
  1. The ability to manage sections, shifts and teams of stewards in order to achieve a smooth, safe and hygienic environment
  2. Ensures all staff is thoroughly familiar with the hotels emergency procedures and in a state of preparedness for any emergency which may occur.
  3. Is familiar with all related company documentation and especially with the relevant Operational Standards Manual for his/her field of responsibility.
  4. Other duties as assigned.
  5. The ability to work together with all staff harmoniously
  6. To have thorough knowledge of the use of all operating equipment and cleaning process
  7. To be aware of and implement the hotel hygiene and sanitation standards and procedures
  8. To be aware of the hotel fire and life safety standards and procedures
  9. Ensure cleanliness and order of all stewarding stores
  10. Practice economy of supplies, electricity and water whenever possible
  11. Co-operate and work as a team
  12. Prepares adequate and appropriate equipment for projected F&B needs
  13. Ensure that equipment is replaced in the correct areas after usage
  14. Responsible for the following as assigned (where applicable):
  15. Kitchen overnight cleaning
  16. Floors / wall cleaning in the kitchen
  17. Ensures prompt, courteous and accurate service to all internal customers, in order to achieve a high level of satisfaction.
  18. Ensures the achievement of organizational standards in hygiene, cleanliness and safety in all F&B areas and for all F&B equipment as per HACCP standards.
  19. Supervises the upkeep and maintenance of all equipment under his/her control including polishing of china, glass, silver and keeping them in designated areas.
  20. Ensures proper and cost effective utilization of resources arterial, equipment, cleaning supplies) to achieve high organizational profitability.
  21. Supervises the controlling of breakages/ pilferage in assigned areas.
  22. Assists the Chief Steward with the smooth operation of the department.
  23. Ensures the stewards maintain the garbage rooms as per international standards and garbage is handled as per the hotels policy (e.g. screening
  24. Kitchen equipment cleaning
  25. Cleaning of ice machines
  26. Cleaning of shelves and filters
  27. Silver, bronze, copper polishing
  28. Washing of dirty F&B operating equipment
  29. Dishwashing process / maintenance of the equipment
  30. Handling and cleaning of equipment trolleys
  31. Garbage disposal
  32. Ensure that the following is implemented to facilitate effective cleaning:
  33. Correct procedures according to standards
  34. Correct cleaning agents and quantity
  35. Correct type of cleaning equipment
  36. Proper handling & storing of equipment (e.g. appropriate temperature control of machine)
  37. Assist in any other functions & areas as informed by the Executive Chef or Executive Sous Chef
Administration:
  1. Maintain all records in a timely and accurate manner
  2. Perform duties in a manner that respects Mvenpick Hotels & Resorts Core Behaviours which are Trust, Relationship, Entrepreneurship and Drive.
  3. Assist in Task Force Teams for new openings.
  4. Carry out any other reasonable task (which may not be stated here) as requested.
Generic Aspects on Hygiene / Personal Safety / Environment/Confidentiality:
  • Ensure proper care of all equipment and furniture entrusted for Heartists use.
  • Be well-familiar with the hotels policies and procedures, well-acquainted with the physical layout of the hotel and its premises and knowledgeable of the hotels emergency procedures in regard to fire, medical, bomb threat, black-out and evacuation.
  • Knows the safety regulations and ensures their application & ensures the safety of people and property in the hotel.
  • Respects and ensures respect of the hotels commitments to the Environment Charter of Sustainability program (saving energy, recycling, sorting waste etc).
  • Understands and strictly adhere to the Rules & Regulations established in the Heartists Handbook and the Hotels policy on Fire, Hygiene, Health and Safety.
  • Ensure that confidential records and other confidential information are properly safeguarded and are not removed from the office.
  • Does not disclose any financial information or any other information of the Accor Hotels.
