Our client is a well known name in catering industry and as an Executive pastry Chef,you will be responsible for the Culinary and Operational aspects of this unique dessert and cake company with clients in the 5* F&B market, the high-end catering market, airline segment as well as supplying retail clients. The responsibility entails providing an excellent client experience with innovative New Product Development, effective Operational Management and friendly Client Interaction.As the Executive Pastry Chef & Operations Manager, you are responsible for operating the 3750 sq.ft. pastry facility, reporting to the Chief Executive Officer and working closely with Sales Management, Business Services Management and Technical Management. You will be required to develop new and exciting new products for our customers, plan production based on orders and sales forecasts and run the operations with your team of chefs and operators efficiently and cost effective.Specifically, you will be responsible for performing the following tasks to the highest standards:Running the pastry production operationsMaintaining a capable team of chefs and operatorsMaintain effective NPD in conjunction with the customersEnsure excellent quality and consistency throughout the dessert offeringsMaintaining the highest level of innovation and creativity to the product offeringSupervise and coordinate all pastry and dessert preparation activities and presentationsPlan production to facilitate client requirementsManage food cost in line with agreed budgets and client expectationsEnsure compliance with Food Hygiene, Health and Safety and Municipal regulations REQUIREMENTS: Trained under recognized European Executive Pastry ChefsA minimum of 6 years as a Head Pastry Chef at 5-star hotels and or high-end dessert and cake suppliers.Ability to have a hands-off approach to managing the Operational Team, by delegating the production tasks to the Operational Team Members after trainingAbility to ensure a consistent quality control functionality on the production floorExperience with high volume food production and the planning thereofApproaches pastry in an innovative and creative wayStrong supervisory skillsStrong employee development skillsPositive can do attitudeGood communication skills, written as well as verbalExperienced in maintaining HACCP programsExperienced in maintaining Quality Management System such as BRC and/or ISOExperience with preparing and maintaining Product SpecificationsExperience with preparing and maintaining Methods of Prep/ Recipe Cards for products to be produced Committed to delivering a high level of customer serviceExcellent grooming standardsExcellent planning and organizing skillsDedicated to the delivery of exceptional service and continuous improvementIt would be advantageous in this position for you to demonstrate the following capabilities and distinctions:Relevant qualifications for roleRelevant references of work experience with successful Chefs in the worldwide Pastry Scene Proficiency with computers and computer programs, including Microsoft Word, Excel, OutlookProficiency with ERP systems
