Make a difference every dayThe Job OpportunitySerco has been supporting the Australian Defence Force (ADF) in the Middle East under the existing MELABS contract since 2011. Serco will provide 21 service lines, including catering, waste disposal, facilities and ground maintenance, laundry, transport management, procurement and welfare services in support of ADF bases primarily in the United Arab Emirates.Serco is looking to hire a Commi Chef 2 for their MELABS contract. The key purpose of this role is to assist catering management in achieving safe food production in line with the approved cyclic menu and to provide sufficient portions to cater for the expected number of clients.Key accountabilities- Follow standard recipes and control the use of food rations and ingredients in line with the appropriate recipes - Ensure that you operate in accordance with all company quality system procedures - Responsible for the quality of own daily food production - Ensure that correct portion control is followed - Minimise food wastage by correct use of HACCP controlled recovery procedures - Ensure that international standards of food hygiene and HACCP are always followed, including correct taking and recording of food temperatures - Meet contract key performance indicators including maintaining client satisfaction levels that result in less than 30 validated complaints per month - Ensure the security of all company and client owned assets, report any damages and losses to the head chef - Monitor pest control and report any case of detection to shift leader or catering management REQUIREMENTS: What we are looking for in our candidates- Basic knowledge of Fruit and Vegetables preparation - Ensure you follow all recipe from Calc Menu, when required to prepare any dishes - To exercise personal duty of care for their own health, safety and welfare and for those affected by their acts or omissions; reference SMS GSOP-HSE1-6 Serco organisational HSE responsibilities Specific requirements- Minimum of 1 years experience as a commis 1 or senior kitchen assistant; - Basic Food Hygiene Certificate - UAE Food Handlers Certificate Working with SercoAt Serco, not only is the nature of the work we do important, everyone has important role to play.We are a team of 50,000 people responsible for delivering essential public services around the world in areas including defence, transport, justice, immigration, healthcare and citizen services.
