Technical Skill:Needs to be experienced in the Preparation of the Following:European, French PastriesArabic Pastry production will be an added advantageA La Carte Pastry productionBe creative in pastry buffet presentations.Responsibilities:Take overall responsibility of the Pastry kitchen.Create Specialty Pastry Menus and executing the same.Conduct daily shift briefings to kitchen colleagues in absence of Executive pastry chef / sous chefPromote a Fun, Professional and Disciplined work environmentLead by example using Fairmonts Mission, Vision & ValuesSupport/Coach/Lead & Motivate kitchen colleaguesActively share ideas, opinions & suggestions in daily shift briefingsEnsure storeroom requisitions are accurate to minimize repeat visitsEnsure all kitchen colleagues are aware of standards & expectationsPromote Health and Safety at all timesEnsure all grooming standards and expectations are followed as requiredEnsure spot check and temperature control sheets are filled as requiredMaintain cleanliness and proper rotation of product in all chillersMinimize wastage/ spoilageMaintain consistent on the job training sessions for culinary colleaguesLiaise daily with Outlet Chefs to keep open lines of communication & guest feedbackStrive to maintain & improve all food preparations & presentationsStrive to improve J.D.P results for Food QualityAct as an extension of kitchen managers to communicate food consistency & qualityConduct daily inspection of all Pre Preparation (Mis En Place) to ensure freshness & quality standards for his / her SectionStrive to develop as a leader by attending Fairmont Managerial CoursesAssign and follow up tasks as dictated by business volumesBe creative in menu creation using available resources.Perform all or any other reasonable duties as required by the department head. REQUIREMENTS: Qualifications:Previous experience in the pastry kitchen is must.Journeymans papers or international equivalent requiredDiploma Certification in a Culinary discipline an assetComputer literate in Microsoft Window applications an assetStrong interpersonal and problem solving abilitiesHighly responsible & reliableAbility to work well under pressure in a fast paced environmentAbility to work cohesively as part of a teamAbility to focus attention on guest needs, remaining calm and courteous at all timesPhysical Aspects of Position (include but are not limited to): Constant standing and walking throughout shiftFrequent lifting and carrying up to 30 lbsOccasional kneeling, pushing, pulling, liftingOccasional ascending or descending ladders, stairs and rampsVisa REQUIREMENTS: Please note that you must be eligible to live and work in the United Arab Emirates.
