He participates in achievement of qualitative and quantitative objectives.Production management??Creates pastries defined in the Menus and respects manufacturing instructions??Ensures pastries standards and Pierre Herm? Paris brand standards??Ensures continuous laboratory cleaning while respecting the rules of hygiene of Pierre Herm? Paris.??Replaces the Pastry Sous Chef in his absence and maintain continuous reporting.??Supervising the stock quantity with the help of the pastry Sous Chef and Executive Pastry Chef.Management of raw materials and finished products??Ensures rigorous storage of raw materials and packaging??Respects the goods rotations under the rules (FIFO)??Avoids the waste of food and non-food products??Manages as recommended laboratory cleaning and equipment provided by Pierre Herm?
