Job Description

Role summaryPerforms professional work, inspecting, coordinating and monitoring quality control, sanitation, food safety and hygiene programs for La Francaise Catering Company; and performs related duties as required.Duties & Responsibilities

  • Develops and monitors the HACCP program (Hazard Analysis Critical Control Points); maintains standardized recipes and other records related to HACCP; develops HACCP food preparation guidelines
  • Monitors all production areas of the District Kitchen to ensure compliance with established HACCP policies and procedures; stops any operation not meeting food quality control standards
  • Ensure through monitoring and random inspection all raw materials and finished items are prepared and manufactured in compliance with the specifications and measures in place with a high cleanliness standard
  • Finished product samples are taking on regular basis to ensure taste, quality and shape are as per specifications
  • Ensure finished products are consistent in the same and top quality
  • Supervise production staff and ensure all are in compliance with personal Hygiene standard and practice (uniform, gloves, closed toe shoes hair net, mask ...)
  • Ensure all raw materials in factory are stored accurately with proper temperature and ensure all are within shelf life and all have production and expiry dates
  • Ensure all kitchen equipment are maintained and in sanitary condition. Inform any problem observe to production supervisor and maintenance
  • Monitoring pest control activities for the factory and shops
  • Monitoring cleanliness and condition of factory premises
  • Monitors quality of in-process food production batches such as temperatures, consistencies and compliance with food quality control and sanitation standards and procedures
  • Initiates problem solving with food production supervisors in response to quality-related production problems
  • Monitors FIFO compliance, proper storage and handling, product labeling and product shelf life
  • Document/develop standards, procedures and policies in related with Food Safety, Hygiene & Sanitation and Product Quality
  • Monitors pest control for the factory; coordinate results to concern departments
  • Ensuring the SOP?s are in practice and updated
  • Train new employees and coach current employees on production and best practice
