Executive ChefJob Location : UAEJob Responsibility :?Follow guidelines established by catering manager concerning but not limited to food production, food cost control, food quality standard, staff performance & development, all day to day operations and attend scheduled catering management meeting;?Brief production staff on daily finding, improvement to ensure the highest level of services;?Ensure the continuity of all kitchen services at a consistently high level;?Control food cost and ensure that each menu deliver the budgeted margin;?Standardize production recipes and food preparation and presentation techniques to ensure consistent quality;?Prepare daily requisition of food products while maintaining strict costing measurement;?Evaluate food products quality to assure that quality standards are consistently attained;?Implement food quality control procedures & ensure all production team comply with check points guidelines during all food production cycles,?Ensure that all kitchen team members have a clear understanding of their roles and what is expected from them at any time;?Positively influence all kitchen staff with regards to performance, motivation, and succession planning;?Coordinate all related production activities between kitchen staff & other catering sections;?Schedules and prepare duty rosters of chefs, cooks and other kitchen employees to assurethat food preparation is economical and technically correct;?Manage and maximize the efficient and effective use of labour, while working within overall budget targets designated by the catering manager;?Develop and sustain a team working culture within production operations;?Provide and support training to all chefs and kitchen staff;?Establish controls to minimize food waste, left over and theft;
